I'd argue Elfman's best score was for Batman Returns. Whatever else one may think of the movie, Elfman did a brilliant job of creating leitmotifs for the main characters and developing them throughout the soundtrack, especially for the Penguin. It was also before he careened *too* far into the Edward Scissorhands-esque "Chimey Happy LA-LA-LA Female Chorus + Dark Orchestrations" schtick. He does some of that in the opening scene, but it actually fits the movie pretty well.

Favorite movie soundtrack: Prokofiev's Alexander Nevsky.
