Does anyone know what insurance companies cover Pitbulls in their policies?

There are several, and I believe State Farm and Farmers are two. However, it is my understanding that different offices within either can vary as to their willingness to write a policy that includes APBTs.

State Farm. That is who we have for our HO insurance.

This^^^ You can call 5 different State Farm offices, and 4 may turn you down due to breed, but the 5th will say yes. Each agent is independent and make their own decisions on whether or not to write a policy, so just because one says no, don't give up, just keep looking. State Farm is usually the least breed specific in their policies.
