Apparently "steaming" as a cooking process was not used in ancient India, it came from China in the v.early AD times.
Idli & Dosai were first made / "invented" in Udupi / the south kanara region by either the konkan or kannada ppl ( read abt this somewhere in Kamat's potpouri or somewhere i think).
