Flyball could be really good for her because, like agility, it's a mix of "OMG! running! OMG jumping!" and really working their brain!

If you are interested in flyball, find a couple of teams near you and email them. Ask to come out to a practice and if they are doing lessons.

I know that for my lab/sighthound mix dock diving does not really tire him out for any length of time.
