Comparing these two is rather like comparing an Agatha Christy mystery with a Nancy Drew mystery. B5 was a well thought space adventure for adults with a convincing story arc. The acting and costuming were designed to reflect credibly a conceptual galaxy in which events have triggered a showdown. Deep Space 9 is part of a much less credible "family-friendly" star trek universe. Further, the show's focus was mostly toward "look what stopped in at the inn coming from somewhere and going somewhere." The Captain and one native female character were well rounded by good actors. But B5 was infinitely superior in making the audience think.
