Beautiful photo!
If it were me I wouldn't compose it so the horizon is in dead center of the frame, but use the rule of thirds, for example.
Still a very nice photo.

How exactly do you make those HDR pictures?
Look for an option at your camera's manual which is called Exposure Bracketing,
This mode allows you to shoot the same frame(on a tripod) at 3 different exposures, so you catch both shadows, highlights and what's in between, and then you digitally merge them all to an HDR(High Dynamic Range) file, which you tonemap later to make it normally visible, in terms of your screen's dynamic range.

I can't find the 'Exposure Bracketing' anywhere in the menu or manual

According to what these people say, bracketing is only possible between -0.7EV and +0.7EV, I wonder why Sony has decided to do so... most cameras will do +/-2.0EV and sometimes 3.0EV.

As for how to reach this mode, better check the manual again, I don't know.
