Another thing I found weird was that two nearly identicle planes were flying next to each other, one spurting trails like crazy and the other not releasing any at all. I have a relatively crude picture I took of it i'll post in a minute.

Just because they look like they're side by side from the ground does not mean they actual are. One could be a couple of thousand feet higher than the other which would explain why one leaves a trail whilst the other doesn't.
