I'd be kinda limited to the places where the package tour companies go, e.g.
Banff
Fernie
Jasper
Lake Louise
Whistler
...
But then I don't like crowds and I am certainly not trendy!
Is "Big White" the place to go for perfect powder or should I go back to studying the Hokkaido snow reports?
There's a lot of powder at Big White. It has the advantage of having affordable on-hill accomodation and tons of varied terrain. The terrain is not as extreme as you can find at Whistler or Sunshine, but there are still some tough true double-diamond runs.

Of the listed hills, Fernie is probably your best chance at perfect powder. But like Whistler, sometimes there's a fine line between powder and rain. Banff is local to 3 resorts: Sunshine, Norquay and Lake Louise. The terrain and scenery is awesome, and sometimes you will get nice powder but don't count on it. Sunshine has the best snow of the three. Jasper (Marmot Basin, actually) is a great hill, gentler than the others but still a lot of fun, but has the most marginal snow conditions of all.

If you're in the UK you'd be better off staying in Europe.
Might be different now that the dollar is stronger, but last I talked to UK tourists it was actually cheaper to come to Canada for an extended ski holiday than to go to Europe. Also, the snow is consistently better and you don't have to deal with the supreme assholery that is European lift lines.
