In a practice session your sensei is teaching you and you are learning new techniques, in a competition you are fighting against an opponent, showing the new skills and techniques you have learnt.

in class keiko, its usually more relaxed.

Rabbit do you mean the difference between a gi-keiko and a shia? (if that is your analogy, you may aswell consider a shinsa also )

at its simplest one is to learn and one is to win (shinsa is neither but rather to demonstrate) your attitude is different in all so actually depending on the purpose (and individual) there may be no difference anyway
