So, I've been trying to find a good recipe for the cheese dip that they have at the authentic mexican restaurants... I've seen so many different ones, but haven't tried any yet. Anyone ever make this or know how to? "Authentic" Mexican restaurants would never serve chili con queso! It's not Mexican cuisine. Technically, it's American food (Tex-Mex). A lot of people would be surprised to find out that food like burritos, chimichangas, and crunchy taco shells were not invented in Mexico and are usually not eaten by people in Mexico, either. Places like Taco Bell are all Tex-Mex, and a lot of the "Mexican" restaurants outside of Mexico are the same way.
