It's great when the weather turns nippy. The sauce is kind of like chicken satay sauce, in that it's just spicy enough that you won't even know the peanut butter is in there. It adds so much flavor to the dish. You can crank up the heat level to your comfort zone and tweak the recipe in all sorts of ways. I like to let the roux brown a little bit more for even more flavor. I don't remember if we used butter in place of oil in the sauce (I think we did, because butter!). It's like caramelizing the onions when you saute them. It just adds that much more flavor to the dish.
